All that skin touches the cabbage will be bacteria no matter how much you washed your hands

Do your springs rust? I bought a bunch and they have been rusting and ruining my ferments. I regret not buying glass or ceramic weights.

Instead of spring i use a cut out circle out of milk jug or cottage cheese top, then i find a round washed rock that fits in jar for weight.

I would imagine that metal spring will Rust from the salt
I’m having a real problem with my ferments…I try to make them very strong but then they start to smell so severe I have to put them into the refrigerator prematurely otherwise I’ll get in trouble with the neighbors in my building. What can I do about this?

1 tsp salt per pound is too little. the proportion should be 2%

I have just made it by mixing green cabbage with red cabbage (I used rubber gloves to prevent getting my hands stained….will see how it turns out 😊
