COSTCO Haul + Our Alaska Freezer = 7 Meal Ideas from OUR ALASKA KITCHEN

1. Golden Chicken Curry (made with Halibut)
recipe from Debbie Osborn
Oven 350
Chicken thighs (we used halibut)
SAUCE:
1/4 cup butter
1/3 cup honey
1/4 cup dijon mustard
2T prepared mustard
1 clove minced garlic
2T lemon Juice
2 T Curry powder
Mix well and pour over chicken. Bake 10 min covered with foil, then continue to cook uncovered and basting about 1 hour. Notes: double the sauce to put over rice. Cooking time is less for halibut, about 30 minutes or until opaque and flakes.
2. Key Lime Pie
1 Graham Cracker Crust https://sallysbakingaddiction.com/how-to-make-a-perfect-graham-cracker-crust/
Filling:
14 oz sweetened condensed milk
3 egg yolks
1/2 cup Nellie and Joes Keylime Juice https://amzn.to/3Ii4T0N
Combine milk, egg yolks, and key lime juice. Blend until smooth. Bake at 350 for 15 minutes. Allow to stand for 10 minutes before refrigerating. Top with whipped cream.
3. Breakfast smootie:
1 cup water
3 ice cubes
1 scoop chocolate protein powder
large handful of spinach
1/2 frozen banana
1 T nut butter
4. Mexican Lasagna (submitted by Steph Gillum)
4 (10″) flour tortillas
1 (16 oz) can refried beans
1 small can of green chilies
1 1/2 lb ground beef
1 pkg. taco seasoning
1 c. chopped tomatoes ( you can use canned if you don’t have fresh)
8 oz cheddar cheese, shredded
8 oz Monterey Jack cheese, shredded
1 jar (8 oz ) salsa
sour cream
black olives
In a 9X13 inch baking dish, layer 2 tortillas on the bottom. Top with 1/2 the refried beans and hamburger mixture, 1/2 tomatoes, 1/2 the salsa, and 1/2 both kinds of cheese. Layer on remaining tortillas and repeat toppings.
Bake at 350 degrees for 20-45 minutes. Serve with sour cream and black olives.
5. Swiss Steak (submitted by Julie Dedman)
1 1/2 pound round steak
1/4 cup flour
salt and pepper to taste
3 T vegetable oil
1 large rib of celery, sliced
1/4 pound of mushrooms, sliced
1 glove garlic, finely chopped
1 large onion, sliced
15 oz stewed tomatoes
1/4 t dried basil
1/4 t crushed oregano
1/4 t dried thyme
Trim excess fat from steak. Pound flour into both sides of the steak. Sprinkle with salt and pepper. In a large skillet, heat oil; add steak and over medium heat brown well on both sides. Place steak in a baking dish.
In the drippings of the skillet lightly cook onion, celery, mushrooms, and garlic. Stil in tomatoes, basil, oregano, and thyme. Pour over the steak. Cover with foil.
Bake at 300 degrees until steak is tender- 1 1/4 to 1 1/2 hours. Serves well with mashed potatoes.
6. 2 LB Bread Maker Buttermilk Bread:
1 1/3 cup buttermilk
2 T butter (soft)
3 T Sugar
1 1/2 tsp salt
4 cups Flour
2 tsp Active Dry Yeast
1/4 cup warm water
* buttermilk substitute: add 1 T of vinegar to milk and let sit for 5 min to curdle
Note: warm milk for 1 minute in the microwave before mixing with other ingredients. Remove bread from the pan as soon as it is finished!

I love baking bread in my bread machine! My current bread maker is a Hamilton Beach, but I’ve also owned various other brands over the last couple of decades (possibly including a Breadman like yours). I think we must have the same brand of measuring cups! (The handle and markings on the one you were using to measure the flour is exactly like mine.)
I typically will make pressure-cooker chicken noodle soup the day after I’ve roasted a chicken for Sunday dinner. (When we get rotisserie chicken, it’s always from the supermarket deli, as the nearest Costco is far enough away that their rotisserie birds would get cold by the time we got home.) I also keep canned chicken breast in the cupboard to supplement the leftover roast chicken if needed (I still have 1 can left of the 6-pack of Kirkland canned chicken breast we bought in November).
I’m so used to making bread like my grandma did that I sometimes forget I’ve a bread machine. I will be trying your recipe soon. Thanks!

It’s official! I love this channel Super Kingsize! This video was awesome for me! Everyone was in it, food preparation was very interesting and came out delicious. How did Bennett know about that can opener? I didn’t know either. Two thumbs up to the subscribers who sent the recipes. I have got to taste some moose meat at some point. The closest I’ve come to seeing it was in Toronto at the St Lawrence Market. So I’m saving my pennies so if you would be so kind to send me some in future.
You are such amazing cook and I open my cans the way you did it the first one and everything looked delicious and I wanted to tell you that I had my surgery yesterday Friday morning and they kept me over night because my oxygen level wasn’t were it should been so I came home Saturday night and it hurts really really bad 😀

We open our cans the first way putting the can opener on the side as someone in the family did it the other way and broke the can opener lol so it is always can opener on the side and lifting the can lid up lol
